Our menus are in a constant state of change. It is our goal to continuously be using what is fresh, local, available and sustainable. The old saying "When it rains it pours" is especially motivating for us. When produce is fresh and plentiful we use as is, when there is too much to use at peak production, we preserve it for use down the road in its new form juxtaposed with the next fresh and seasonal resource. Our focus on preserving the often abundant harvests from our network of friends, families and farmers can be seen throughout our menus.
